I recommend the Burton Loop for dual sporting. You can easily modify this to be a Bellville-Burton Loop and not go all the way to Katy.

Katy to Burton Loop
Katy, TX to Burton Loop There are some over lapping segments going out from and coming back to Katy. For this reason I have split the track in to two at Burton to avoid directional confusion. One track is Katy to Burton (192 miles)and is in Green. The second is Burton to Katy (79.4 miles)...

@Morgstang does regular rides in the area, and knows it well. Hit a few rides with him and you'll get a good collection of roads

I remember FM 390 being a pleasant jaunt but that was 10+ years ago.
