Smitty's in Lockhart for the original central Texas meat market experience (and good food), Luling City Market, just about any small town in central Texas has an outstanding BBQ house.
 
The "great" places that have limited quantity or hours live off those limits to be great. Lack of supply drives demand. Snows has been around for years, but it wasn't "great" until TX Monthly said so and made the lines stupid long. Same goes for Franklins. I was going there when it was a food truck next to the porn store. It was good then, but no one was there because some magazine hadn't said so yet. Aaron buys all his briskets from the same place. It's all prime and he buys 100% of what they have available. He controls the source so the supply is the same and the quality carries over time after time. Others do the same at various levels.

I don't tell people about the great places I know of anymore because I don't want to stand in line for hours to get scraps.
 
Well, the place is only open 4 hours a week, so your options are pretty limited!
 
Last time I went was maybe 3 years ago - I rode in alone and got there about 11. There wasn't much of a line, and I soon found out this was because they'd run out of brisket. I got some other stuff and sat at a picnic table across from a couple from Houston. They started asking about my bike, that I came alone, etc - and then realized I didn't have any brisket on my plate. Once they learned that I'd arrived too late for it, they insisted on giving me a big SLAB of brisket from their plate. They said it would be the best thing I'd eat all year, and I don't think they were wrong.
 
Once I discovered Two Fat Guys in Campwood ive stopped at Kruses in Lockhart a couple times if I was passing through or Coopers Llano if passing through but if I’m on a mission for BBQ it will be Campwood only , the best of everything and by far the best ribs I ever tasted . They are good enough for me to make the exclusive choice . So good I’ve gone in there and bought 25 pounds of Q and fed the whole party several times . RibMasters in east Texas is another choice that’s worth going a couple hundred miles out of the way . . Not sure where the east Texas store is but the store they had in tomball a few years ago was outstanding . Like head and shoulders above the competition which was fairly easy to do in the houston area .
 
Luckily for me the best brisket I've ever had is just a few miles away. Schmidt Family BBQ in Bee Cave. Chad Franks is the son in law of Don Schmidt who owned Kruez with brother Rick for many years. Chad's brisket puts the rest of the family as also rans.
 
Here’s the deal. Everyone has their favorite, nobody will ever agree, nearly all Texas bbq is better than what you’ll find anywhere else, and the fun is trying them all!

we liked Kreuz, didn’t like Black’s, LOVE LJ’s in Brenham, love the Pit Room and Pinkertons in Houston, and really liked Schmidt Family BBQ in Bee Cave. Whatever we had in Fredericksburg wasn’t any better than a McRib but it was supposedly the best in town.

it’s all good, it’s fun to try the known ones and discover the hidden gems and even better to ride to eat!

Similar, Brooks Place BBQ in Cypress is one of the best I have had. He has had a little trailer set up in the same parking lot for years.
He was in the Top 50 list in the past.

I see Brett's BBQ in Katy is on the list, which is only 3 miles from me. Never been there.
It used to be Nonmacher’s Bar-B-Que, but he sold it a few years ago, I had been there a few times when it was still Nonmacher’s and did enjoy it.

When I was up in Sweetwater, I stopped at a place called Big Boys BBQ just south of I-20, and I hate to admit was as good a brisket (if not better) than Brooks.
Super tender and great flavor, with a really good sauce.

My father in law still has the best brisket I have ever had. He and a few co-workers did the Fort Bend County Fair cookoff for over a decade, they even won a place at the Houston Livestock Show and Rodeo Cookoff from it one year as best overall.
Some of his "scrap" brisket was better than I have had at some of these "best" places.
 
I've long been a fan of City Market in Luling, not really keen on any of the the Lockhart offerings. Snow's was always at the top of my list but it has been over a decade since I've been there so it deserves a revisit sometime in the near future. McMillan's BBQ in Fannin, TX (outside of Victoria and Goliad) is a nice little tucked away gem, they have a fantastic chopped sandwich, he even catered for the president a few times in years past.
 
I go to Thorndale Meat Market on friday. Two meat two sides special went up from 12 dollars to 13 dollars. They load it on and I like it and the price. Double beans for me.

How does it compare to the place in Taylor?
Louie Muelar's is a little better in my opinion. The problem is L M sells briskeit at 32 bucks a pound and does not have combo plates, Brisket sandwich is 15.50
TDMM sliced sandwich is 10 dollars with twice the meat They have the El Gordo any two meats is 13 bucks, Brisket is 22 per pound. Brown beans and their sauce is the best I have ever tasted. Not as crowded and it has a meat market and lots of dry goods. I buy raw steaks hambuger and sausage and frozen catfish and vegitables there too. I know many will disagree but I like Thorndale Meat Markrt BBQ better than Louie Muelars or Bretts in Rockdale. Lived in this area for ten years and still never been to Snows in Lexington. I don't like lines :).
Actually I live 7 miles south of Thorndale and Taylor and Rockdale are not far. No prjudice here just good food and larger portions at the T' orndale Meat Market. Onwer Trey a Gulf War veteran and the owner is a friend of mine.

Well I still have not tried it but know where it is now. Been through there a lot of times but had no idea there was a BBQ joint there. Went through today and ran by and snapped a photo which I posted in t he day rides thread. Will be trying this out one of these days. Thanks for mentioning it.

Awesome! Do you reside in the area? I grew up in Victoria.
